My challenge was to find a muesli bar recipe for the masses. One without sultanas (Abby doesn't like them) or nuts (can't take them to school) and one that wasn't too dry or bland but also not too sugary or sweet.
1 cup rolled oats
1 cup dessicated coconut
1 1/2 cups rice bubbles
1/2 cup sesame seeds
1/2 cup sunflower kernels
1/2 cup pumpkin seeds (pepitas)
See? 5 cups of dry ingredients
1/2 cup honey
1/3 cup brown sugar
And this is how you make them :
In a small saucepan over medium heat, cook the butter, honey and sugar, stirring, for 4 minutes or until all the sugar dissolves. Bring to the boil then reduce the heat and let it simmer for 8-10 minutes.
They store for about a week but ours never last that long!
