Muesli Bar Challenge

My challenge was to find a muesli bar recipe for the masses.  One without sultanas (Abby doesn't like them) or nuts (can't take them to school) and one that wasn't too dry or bland but also not too sugary or sweet.  

And this is what I've come up with.  It's a mixture of Fiona's recipe and one that I found on Taste dot com.
I have experimented a bit and discovered you can add any cereal you like to these (weetbix, cornflakes, even muesli!), just so long as the balance of dry ingredients is correct (5 cups total). 

So, here it is :


1 cup rolled oats
1 cup dessicated coconut
1 1/2 cups rice bubbles
1/2 cup sesame seeds
1/2 cup sunflower kernels
1/2 cup pumpkin seeds (pepitas)

See?  5 cups of dry ingredients


125g butter
1/2 cup honey
1/3 cup brown sugar

And this is how you make them :

Cook dry ingredients in a frying pan over medium heat, stirring, for 10 minutes until golden.  Transfer to a bowl and set aside to cool.

In a small saucepan over medium heat, cook the butter, honey and sugar, stirring, for 4 minutes or until all the sugar dissolves.  Bring to the boil then reduce the heat and let it simmer for 8-10 minutes. 

Mix together with the dry ingredients and spoon the mixture into a large baking pan (like a lamington pan) lined with baking paper.  Use a large metal spoon to press down firmly.  Allow to cool then cut into squares.

They store for about a week but ours never last that long!
