It's time to go...red kidney beans

The August pantry challenge continues into September because the pantry is still full (but not quite as full as it was a month ago). Tonight we had an old favourite in this house (probably every house) TACOS. I make a vegetarian version which even pleased the tum of my meat-a-tarian Dad when I made it for him.

Let the taco feast commence. The taco king is there on the right in the aqua suit.

The recipe (from the AWW Vegetarian cookbook) -

A splash of olive oil
1 brown onion
1 clove of garlic (crushed)
1 tomato per person, chopped
1 tbsp tomato paste
1-2 tbsp of taco seasoning
1 cup of vegetarian refried beans
420g can red kidney beans, drained, rinsed
Taco shells
1 avocado
4 green onions
1 small red capsicum

Heat oil in the pan and cook the brown onion and garlic until soft. Stir in the tomatoes, tomato paste and seasoning. Simmer for 10 minutes. Then add the beans and simmer for another five minutes. Meanwhile prepare the taco shells and the salsa (chop and combine the avocado, green onions and red capsicum). Serve with grated cheese, salsa etc. EAT. YUM.
