Our Australia Day was spent in a very Australian location - the backyard. It was a bit hot (it's always hot on Australia Day, yes?) for too much strenuous gardening but we managed to knock over a few jobs this morning while Rory had a long nap (as you do when you're awake half the night) and Abby was next door making a mess at their house instead of ours.
We are having lamb on the bbq for tea and although I thought about whipping up a pavlova (I'll attempt it one of these days) we made some Anzac biccies instead. Ok, I have the occasion wrong, but they're still Australian.
I like this recipe because you don’t have to pre-melt the butter which means less time until they're in your tummy. Abby does the measuring and mixing of all the dry ingredients and also helps make the little balls.
1 cup plain flour
1 cup rolled oats
1 cup brown sugar
½ cup coconut (works without it)
2 tbsp golden syrup
1 tbsp water
½ tsp bicarbonate of soda
Put flour, sugar, oats and coconut in a bowl.
Melt the butter in a saucepan and add the golden syrup and water
Stir the bicarb soda into the liquid mixture
Add the liquid to the dry ingredients and mix thoroughly
Place walnut-sized balls of the mixture on a lined tray and bake for 15-20 min at 175.
Biscuits will harden when cool.
